I have read lots of things on the internet saying the game is easier, and materials for weapon upgrades are easy to come by.
Does that mean that this is not a true souls game and plays like a lot of other RPGs out there? I understand, it is still fun, but does it capture the feeling and quality of Dark Souls 1?

It plays like Dark Souls, I wouldn't call it easier, no. I would say the quality is there, yes.
The one negative. Dark Souls 1 and Bloodborne have some very memorable bosses and locations, where the encounters are full of character. I would suggest DS3 doesn't quite achieve the highs these games did but it's still a ton of fun.
@Draco_Ecliptic It's a beast of a game and you'll love it. Some of the bosses are a bit too easy, but other than that it's great. It definitely felt like more of a 'true' Dark Souls game than DS2 to me.
