The Demon bosses in Demon's Souls are the hardest and most stressful part of the whole affair. Filling up on souls in the stage prior only to have to prove yourself against a giant enemy with a massive health bar to match is almost always a daunting task.

How to beat Armor Spider in Demon's Souls
Just like the most of the enemies found throughout the mines, the Armor Spider is weak to magic. That means you'll have an inherent advantage if you're a spellcaster, but you'll still be able to leverage that weakness if your character is melee-focused.
The Magic Method
Time to bust out Soul Arrow and those salts because spamming spells is most of what you'll have to do for this one. Fire-based spells won't be nearly as effective since the giant armored spider is actually resistant to fire elemental attacks. You'll have to get fairly close to the spider itself to get your Soul Arrows to connect, but you should be able to quickly roll out of reach of its fireball salvos which will be your biggest threat.
Don't neglect to watch out for its webs though. Getting hit by one of its web projectiles or stepping into a patch of webbing on the ground will significantly reduce your movement speed and cause you to stagger if you try to dodge roll, making it much harder to avoid the long rage fireball attacks. Try your best to resist the urge to roll if you're covered in the spider's sticky webs.
The Melee Method
Have some Sticky White Slime at the ready because using it will enchant your sword, allowing it to deal magic damage – the Armor Spider's weakness. Keeping the weapon enchantment active will help you dish out more damage when you're able to get up close, causing the fight to take less time. Dodge roll past the initial few fireballs to get within striking range.
Dealing more damage with an enchanted weapon is especially useful given the spider's repertoire of close range attacks once you're all up in its business. Try to stay toward its center to avoid its more powerful and unblockable leg slam attack that can be avoided with a quick backwards dodge roll. Its regular leg swipes aren't too damaging and can be reliably blocked by raising your shield.
Always be on the lookout for the black tar that the Armor Spider will begin regurgitating. As soon as you see the black stuff, book it for the back of the boss arena because a bunch of fire is coming your way. This attack will likely be the one that'll do you in, so watch for it closely and react immediately. While you're back in the beginning of the tunnel, you'll have the perfect opportunity to heal up with some grasses and reapply the Sticky White Slime before diving back in and repeating the process.
